Make the Base

In a medium saucepan, combine the whole milk, heavy cream, and half of the sugar. Heat over medium heat until the mixture is warm but not boiling.

Whisk Egg Yolks

In a separate bowl, whisk together the egg yolks and the remaining sugar until pale and thick.

Combine Mixtures

Slowly pour the warm milk mixture into the egg yolks, whisking continuously to temper the yolks. Return the mixture to the saucepan.

Thicken the Base

Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

Add Flavor

Remove from heat and stir in the vanilla extract and a pinch of salt. Let cool to room temperature, then refrigerate until chilled.

Churn the Gelato

Once the mixture is chilled, churn it in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
