Truffle Fries Recipe

Prepare the potatoes
Wash and peel the potatoes. Cut them into thin strips, about 1/4 inch thick. Soak the cut potatoes in a large bowl of cold water for at least 30 minutes to remove excess starch.

Final fry for crispiness
Increase the oil temperature to 375°F (190°C). Re-fry the potatoes in batches for 2-3 minutes until golden brown and crispy. Remove and drain on fresh paper towels.

Toss with truffle and toppings
While the fries are still hot, place them in a large mixing bowl. Drizzle with truffle oil and toss to coat evenly. Add grated parmesan, chopped parsley, salt, and pepper. Toss again and serve immediately.

Make the garlic aioli
In a small bowl, combine mayonnaise, minced garlic, lemon juice, olive oil, salt, and black pepper. Stir well until smooth and creamy. Cover and refrigerate until ready to serve.
