Sauté Shrimp
Heat a skillet over medium-high heat. Sauté the shrimp for 2-3 minutes on each side until pink and cooked through. Drizzle with lemon juice before removing from heat. Set aside.

Finish Grits
Stir in butter, salt, pepper, and shredded cheddar cheese. Mix until smooth and creamy. Keep warm on low heat.
Tasso Ham Gravy

Make Roux
In a small saucepan, melt butter over medium heat. Add the flour and whisk continuously for 1-2 minutes until lightly golden.

Cook Gravy
Add diced Tasso ham and stir well. Slowly whisk in chicken stock and bring to a simmer. Cook for 5-7 minutes, stirring often, until thickened. Add heavy cream, Cajun seasoning, salt, and pepper. Simmer for another 2 minutes. Remove from heat.

Thinly slice green onions for garnish.
Assembly

Spoon a generous serving of creamy grits into a bowl or plate. Top with sautéed shrimp. Spoon Tasso ham gravy over the shrimp. Sprinkle with sliced green onions and serve immediately.
