Bruschetta Topping

Prepare Tomato Mixture
In a mixing bowl, combine the diced cherry tomatoes, chopped fresh basil, and finely diced red onion.

Drizzle in the olive oil and season with salt and black pepper. Stir gently to combine and set aside to allow the flavors to meld while you prepare the rest.
Balsamic Reduction

Make Balsamic Reduction
In a small saucepan over medium heat, add the balsamic vinegar and honey. Bring to a simmer.

Reduce heat to low and simmer for about 10–12 minutes until the mixture has reduced by half and has a syrupy consistency. Stir occasionally and keep an eye to prevent burning. Remove from heat and let cool.

Prepare Baguette
Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush each slice lightly with olive oil.

Toast in the oven for 8–10 minutes or until golden and crisp. Remove and allow to cool slightly.

Assemble Bruschetta
Spread a thin layer of softened goat cheese onto each toasted baguette slice. Spoon the tomato mixture generously over the cheese.

Drizzle each bruschetta with a small amount of balsamic reduction. Serve immediately as an appetizer or snack.
