Prepare the glass
Place a large ice cube into a rocks glass and set aside.

Mix the cocktail
In a mixing glass, combine 2 oz of bourbon, 2 dashes of smoked bitters, and 0.25 oz of demerara syrup. Add ice and stir for about 20-30 seconds until well chilled and slightly diluted.

Strain and garnish
Strain the chilled cocktail over the large ice cube in the rocks glass. Express the oils of one strip of orange peel over the drink and drop it into the glass as garnish.

Smoke the glass (optional)
Before adding the cocktail, use a smoking gun or torch to ignite a pinch of wood chips on a fire-safe surface. Invert the empty rocks glass over the smoke to capture it for about 10-15 seconds. Then turn the glass upright and proceed with assembling the drink.

Flame an orange peel (optional)
Hold an extra strip of orange peel skin-side-down over the drink. Using a match or lighter, briefly warm the peel and squeeze it to express the oils through the flame, creating a smoky aroma over the drink.
