Boil and Chill Shrimp
In a medium pot, bring 4 cups of water, 1 tablespoon of salt, and sliced lemon to a boil. Add the shrimp and cook for 2–3 minutes or until pink and opaque. Immediately transfer shrimp to an ice bath to stop the cooking. Let chill for 10 minutes, then drain and pat dry.

Make the Vinaigrette
In a small mixing bowl, whisk together the lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper. Slowly drizzle in the olive oil while whisking continuously until the dressing is emulsified. Set aside.

Assemble the Salad
In a large bowl, combine the mixed greens, cherry tomatoes, cucumber slices, and red onion. Toss lightly to mix.

Dress and Serve
Add the chilled shrimp to the lemon vinaigrette and toss to coat evenly. Spoon the marinated shrimp over the mixed greens. Serve immediately.
