    Season and Sear

    Season each filet with salt and pepper on both sides. Heat olive oil in a cast-iron skillet over medium-high heat until just starting to smoke. Sear the filets for 2-3 minutes per side until a brown crust forms.

    Baste and Finish

    Add butter, crushed garlic, rosemary, and thyme to the skillet. Tilt the pan slightly and use a spoon to baste the steaks with the melted butter and herbs for 1-2 minutes. Transfer the skillet to a preheated oven at 400°F (200°C) and roast for 4-6 minutes for medium-rare. Let rest for 5 minutes before serving.

Garlic Mashed Potatoes

    Boil Potatoes and Garlic

    Place cubed potatoes and whole garlic cloves in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil and cook for 15-20 minutes until potatoes are fork-tender.

    Mash and Season

    Drain the potatoes and garlic, then return them to the pot. Add butter and heavy cream. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm until ready to serve.

Asparagus

    Prepare and Roast

    Preheat oven to 400°F (200°C). Toss trimmed asparagus with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.

    Roast and Finish

    Roast the asparagus for 12-15 minutes until tender and slightly browned. Remove from oven and sprinkle with lemon zest before serving.
