    Marinate the duck

    In a bowl, combine buttermilk, garlic powder, paprika, salt, and black pepper. Add duck tenderloins and toss to coat. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

    Prepare the batter

    In a mixing bowl, whisk together flour, cornstarch, and baking powder. In a separate small bowl, beat the egg with cold water. Add the wet mixture to the dry ingredients and whisk until a smooth batter forms. Let it rest for 10 minutes.

    Heat the oil

    In a heavy-bottomed pan or deep fryer, heat vegetable oil to 350°F (175°C).

    Coat and fry the duck

    Remove duck tenderloins from marinade and let excess drip off. Dip each piece into the batter, allowing extra to drip off. Carefully place into hot oil and fry in batches for 4–5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the sauce base

    In a small saucepan, combine orange juice, orange zest, honey, rice vinegar, soy sauce, garlic, ginger, and red pepper flakes. Bring to a simmer over medium heat, stirring occasionally.

    Thicken the sauce

    In a small bowl, mix cornstarch with 1 tbsp cold water until smooth. Stir this slurry into the simmering sauce. Continue to cook for 2–3 minutes, stirring, until the sauce thickens and becomes glossy. Remove from heat.
