Peel and halve the eggs
Once the eggs are cool, peel them carefully. Slice each egg in half lengthwise and gently scoop out the yolks into a small mixing bowl. Set the whites aside on a serving plate.

Make the filling
Mash the yolks with a fork until crumbly. Add mayonnaise, Creole mustard, hot sauce, paprika, cayenne pepper, salt, and black pepper. Mix until smooth and creamy. Adjust seasoning to taste.

Slice green onions
While the bacon cooks, finely slice the green onions and set aside.

Using a spoon or piping bag, fill each egg white half with the yolk mixture, mounding slightly.
