Chocolate Mousse

    Melt Chocolate and Butter

    Place the chopped dark chocolate and butter in a heatproof bowl set over a pot of simmering water (double boiler method). Stir occasionally until melted and smooth. Remove from heat and let cool slightly.

    Whip Egg Yolks

    In a medium bowl, whisk the egg yolks with 1 tablespoon of sugar until thick, pale, and slightly increased in volume, about 2 minutes.

    Combine Chocolate and Yolks

    Slowly whisk the slightly cooled chocolate mixture into the egg yolk mixture until fully combined. Stir in vanilla extract.

    Beat Egg Whites

    In a clean mixing bowl, beat the egg whites with a pinch of salt using an electric mixer until soft peaks form. Gradually add the remaining 1 tablespoon of sugar and beat until stiff peaks form.

    Fold in Egg Whites

    Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip Cream

    In another bowl, whip 1 cup of heavy cream to soft peaks. Gently fold the whipped cream into the chocolate and egg mixture until fully incorporated and smooth.

    Chill Mousse

    Spoon the mousse into individual serving dishes or glasses. Cover and refrigerate for at least 2 hours or until set.

Toppings

    Whip Cream Topping

    In a chilled mixing bowl, whip 1 cup heavy cream with powdered sugar and vanilla extract until soft peaks form. Keep chilled until ready to serve.

    Prepare Berries

    Wash and gently pat dry the fresh berries. If using strawberries, hull and slice them.

    Assemble and Serve

    Before serving, top each chocolate mousse with a dollop of whipped cream. Garnish with fresh berries and optionally sprinkle with dark chocolate shavings.
