Prepare Caesar Dressing

Combine flavor base
In a medium bowl, mash together the minced garlic and chopped anchovy fillets using the back of a spoon to form a paste.

Add Dijon mustard, Worcestershire sauce, and fresh lemon juice to the bowl and whisk until well combined.

Whisk in the egg yolk until the mixture is smooth and slightly thickened.

While whisking continuously, slowly drizzle in the olive oil to create a stable emulsion.

Stir in the finely grated Parmesan, salt, and black pepper. Taste and adjust seasoning if necessary. Set aside.
Assemble Salad

Wash, dry, and chop the Romaine lettuce into bite-sized pieces. Place in a large salad bowl.

Add the freshly grated Parmesan cheese and croutons to the bowl with the lettuce.

Drizzle the Caesar dressing over the salad and toss gently to evenly coat the lettuce and toppings.

Serve immediately, optionally garnished with additional Parmesan and freshly ground black pepper.
