    Prepare the spice mix

    In a small bowl, mix together the paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, black pepper, and salt.

    Season the shrimp

    Place the shrimp in a large bowl and drizzle with olive oil. Toss to coat. Sprinkle the spice mix over the shrimp and toss until evenly coated.

    Cook the shrimp

    Heat a large skillet or cast iron pan over medium-high heat. Once hot, add the seasoned shrimp in a single layer. Cook for 2–3 minutes per side or until shrimp are opaque and slightly charred. Remove from heat and set aside.

Smoked Gouda Grits

    Cook the grits

    In a medium saucepan, bring water, milk, and salt to a gentle boil over medium heat. Slowly whisk in the grits to avoid lumps. Reduce heat to low and cook, stirring occasionally, for 20–25 minutes or until the grits are thick and tender.

    Finish the grits

    Once grits are cooked, stir in the butter until melted. Add the shredded smoked gouda and stir until completely melted and smooth. Season with black pepper to taste.

To Serve

    Spoon a generous portion of smoked gouda grits onto each plate or bowl. Top with blackened shrimp and garnish with optional chopped parsley or a squeeze of lemon, if desired.
