Prepare the Sauce

Mix the sauce
In a small bowl, combine soy sauce, hoisin sauce, rice vinegar, honey, and red pepper flakes (if using). Stir well to blend and set aside.
Cook the Filling

Sauté aromatics
Heat vegetable oil in a large skillet or wok over medium-high heat. Add garlic and ginger and sauté for 30 seconds until fragrant.

Cook chicken
Add ground chicken to the skillet. Cook, breaking it apart with a wooden spoon, until fully cooked and no longer pink, about 6–8 minutes.

Add vegetables
Stir in chopped water chestnuts and scallions. Cook for another 2–3 minutes until the vegetables are heated through.

Add sauce and sesame oil
Pour the prepared sauce over the chicken mixture and stir well to combine. Drizzle in the toasted sesame oil. Cook for an additional 2 minutes until everything is evenly coated and heated through.
Assemble and Serve

Prepare lettuce cups
Lay out clean, dry butter lettuce leaves on a serving platter.

Fill and garnish
Spoon the warm chicken mixture into each lettuce cup. Top with toasted sesame seeds and extra sliced scallions for garnish. Serve immediately.
