Chocolate Ganache Preparation

    Chop and Melt Chocolate

    Chop the dark chocolate into small pieces and place it in a heatproof bowl.

    In a saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour it over the chopped chocolate.

    Let it sit for 2-3 minutes to soften the chocolate, then stir until smooth.

    Add the unsalted butter and mix until fully melted and combined. Let the ganache cool to room temperature.

Chocolate Shell Preparation

    Melt Milk Chocolate

    Chop the milk chocolate into small pieces and melt it using a double boiler or microwave.

    Once melted, allow it to cool slightly before using it to coat the molds.

Assembly of Chocolates

    Coat Molds with Chocolate

    Using a brush or a spoon, coat the insides of a silicone chocolate mold with the melted milk chocolate. Make sure to create an even layer.

    Place the mold in the refrigerator for about 10 minutes to set the chocolate.

    Fill with Ganache and Flavors

    Once the shell is set, fill each cavity with the chocolate ganache, leaving a little space at the top.

    Add a small amount of caramel sauce and a pinch of sea salt to half of the chocolates and raspberry puree to the other half.

    Top off with more ganache to seal the fillings.

    Seal and Final Set

    Cover the ganache layer with more melted milk chocolate to completely seal the chocolates.

    Return the mold to the refrigerator for another 20 minutes to set completely.
