Method
Prep
- 1
Chill glass
Place a rocks glass in the freezer or fill with ice water to chill while you prepare the cocktail (about 5 minutes).
- 2
If using fresh pineapple juice, cut a small piece of pineapple and press/press or use a juicer to yield 1.5 oz of juice. Fresh juice gives brighter flavor.
Build & Shake
- 3
Add 2 oz Bacardi Black Rum, 0.75 oz Domaine de Canton ginger liqueur, 1 oz coconut cream, 0.75 oz fresh lime juice, and 1.5 oz fresh pineapple juice into a cocktail shaker.
- 4
Add 5–6 ice cubes to the shaker (enough to chill well).
- 5
Secure the shaker and shake vigorously for 10–12 seconds until well chilled and slightly frothy from the coconut cream.
Serve
- 6
Dump the chilling ice water from the rocks glass (if used). Fill the chilled rocks glass with 2–3 large ice cubes or fresh crushed ice, depending on preference.
- 7
Strain the shaken cocktail over the ice into the prepared rocks glass using a Hawthorne or fine strainer to catch any pulp.
- 8
Garnish with a pineapple wedge and a lime wheel on the rim. If using, grate a pinch (about 1/4 tsp) of fresh ginger or place a small piece of candied ginger on a cocktail pick and rest across the glass for an aromatic high-vibe finish.
- 9
Serve immediately with a short straw. Encourage the guest to give a gentle stir before sipping to integrate any cream settled on top.
