Cauliflower & Batter
Prepare cauliflower
Trim and cut cauliflower into medium florets, roughly uniform in size (about 1 to 1.5-inch pieces). Rinse and pat dry thoroughly. Excess moisture will prevent the batter from adhering.
Make batter
In a medium bowl, whisk together 3 tablespoons all-purpose flour, 3 tablespoons cornstarch, 1 teaspoon baking powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Add 3 tablespoons cold water and stir until a thick, smooth batter forms. If desired, nest a small bowl over ice or add 1–2 ice cubes briefly to keep batter cold (remove before dipping). Batter should coat but not be runny — adjust with up to 1 tablespoon more water or 1 teaspoon more flour to reach a sticky, thick consistency.
Batter and fry cauliflower
Working in batches to avoid crowding, dip each cauliflower floret into the batter, letting excess drip off, then carefully add to the hot oil. Fry until golden brown and crisp, 3–4 minutes per batch, turning once. Use a slotted spoon to transfer fried florets to a wire rack set over a sheet pan or paper towel-lined plate to drain. Keep fried cauliflower warm in a low oven (200°F / 95°C) while you finish frying remaining batches.
Szechwan BBQ Sauce
Toast chiles and aromatics
In a small saucepan or skillet, heat 1 tablespoon vegetable oil over medium heat. Add 1 tablespoon minced garlic, 1 teaspoon minced ginger, and 1 tablespoon chopped/crushed Szechwan dried red chiles. Stir constantly for 30–45 seconds until fragrant but not burned.
Build sauce
Add 2 tablespoons hoisin sauce, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 teaspoon tomato paste, 1 teaspoon Sriracha, and 3 tablespoons water to the pan. Stir to combine and bring to a gentle simmer.
Thicken sauce
Stir in cornstarch slurry (1 teaspoon cornstarch mixed with 1 teaspoon water) a little at a time while simmering, cooking 1–2 minutes until sauce thickens to a glossy, coat-able consistency. Taste and adjust balance: more vinegar for tang, more sugar for sweetness, more Sriracha or chiles for heat. Remove from heat and set aside.
Coat cauliflower
Place the fried cauliflower in a large mixing bowl. Pour the warm Szechwan BBQ sauce over the cauliflower and toss gently to coat evenly. Work quickly so the crust stays crisp but the sauce clings to each piece.
Sriracha Aioli
Make aioli
In a small bowl, whisk together 1/2 cup mayonnaise, 1 teaspoon Sriracha, 1/2 tablespoon lime juice, 1/2 teaspoon grated garlic, 1/4 teaspoon sesame oil, and 1/8 teaspoon salt until smooth. Taste and adjust heat or acidity as desired. Cover and refrigerate until ready to serve.
Assembly & Garnish
Transfer the sauced Szechwan cauliflower to a serving platter or individual plates. Drizzle or dot Sriracha aioli over the cauliflower, or serve aioli on the side for dipping.
Scatter thinly sliced scallions, toasted sesame seeds, and cilantro leaves over the top for color and aroma. Serve immediately while cauliflower is hot and crisp.
