Method
Cheeses & Charcuterie
Bring cheeses to temperature
Remove all cheeses from refrigeration 30–60 minutes before serving (longer for larger wheels). This allows flavors and textures to open up.
Prepare soft cheese
If using brie or camembert, score the rind lightly in a crosshatch or remove a small wedge for easy serving. Place on board with a small cheese knife.
Slice & arrange firm cheeses
Cut the aged cheddar into 1/4-inch slices or bite-sized cubes. Crumble blue cheese into a small pile. Slice goat cheese log into medallions or leave whole with a spreader.
Fold charcuterie
Fold prosciutto slices into loose ribbons and roll or stack salami into small rosettes or fans. Arrange near cheeses so guests can mix and match.
Breads & Crackers
Slice the baguette on a diagonal into 1/4-inch slices. If desired, toast lightly in a 375°F (190°C) oven for 5–7 minutes until warm and slightly crisp. Fan crackers and place them in small stacks or scattered groups around the board for visual variety.
Fresh Fruit & Veg
Rinse grapes and leave some on the stem for visual impact; remove a few individual grapes for easy picking. Slice apples or figs just before serving to prevent browning; if using apples, toss lightly in lemon juice to slow oxidation. Arrange fruit and tomatoes in small clusters around cheeses.
Pickles, Nuts & Extras
Place olives and cornichons in small bowls or ramekins to contain brine. Spoon fig jam or honey into a small dish and place near soft cheeses for spreading. Scatter nuts and dried apricots in small piles, balancing salty and sweet elements across the board. Add whole grain mustard in a small bowl for a savory condiment.
Garnish & Finish
Tuck rosemary or thyme sprigs between items for aroma and color. Sprinkle a light pinch of flaky sea salt on exposed cheese surfaces and a little cracked pepper over mild cheeses if desired. Step back and check balance: ensure a mix of textures, colors, and bite-sized groupings so guests can easily compose plates.
Serve with cheese knives and small spoons for jams/condiments. Provide napkins and small plates. Keep chilled items replenished from refrigeration as needed.
