Cocktail

Method

House Huckleberry Simple Syrup

  1. 1

    Combine and cook

Place huckleberries, sugar, and water in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer. Smash berries with the back of a spoon or a potato masher to release juices. Simmer for 6–8 minutes until the sugar is dissolved and the mixture has a deep purple color.

  2. 2

    Strain and finish

Remove from heat and let cool slightly. Strain syrup through a fine mesh sieve into a heatproof container, pressing solids to extract as much liquid as possible. Discard solids. Stir in lemon juice if using. Cool completely before using. Refrigerate up to 2 weeks.

Cocktail Assembly

  1. 3

    Prepare the rim

On a small plate, mix the chili salt, coarse salt, and chili powder thoroughly. Rub the lime wedge around the outer rim of a rocks glass to moisten, then dip the rim into the chili salt mixture, turning to coat evenly. Set glass aside.

  2. 4

    Shake the cocktail

Fill a cocktail shaker with ice (about 3/4 full). Add 2 oz Lunazul Blanco, 1/2 oz Cointreau, 3/4 oz fresh lime juice, and 3/4 oz house huckleberry simple syrup. Secure the lid and shake vigorously for 10–15 seconds until very cold and slightly diluted.

  3. 5

    Strain and serve

Fill the prepared rocks glass with fresh ice. Double-strain the cocktail into the glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any berry solids. Garnish with a lime wedge or a huckleberry (or lime wheel) on the rim.

  4. 6

    Optional: Adjust sweetness or heat

Taste and, if desired, add a splash (1/4 oz) more huckleberry syrup for extra fruit or 1/4 oz extra lime for more brightness. For more heat on the rim, lightly dust additional chili powder on the finished drink.
