Cooking the Pasta

Boil the Water
In a large pot, bring salted water to a boil over high heat.

Cook the Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Reserve Pasta Water
Before draining, reserve about 1 cup of the pasta cooking water, then drain the spaghetti and set aside.
Preparing the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until it becomes crispy, about 5-7 minutes. Remove from heat.

Whisk the Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining Ingredients

Combine Pasta and Pancetta
Add the drained spaghetti to the skillet with the pancetta, tossing to combine.

Adjust Consistency
If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.

Season to Taste
Taste the pasta and add salt if necessary, then toss again to ensure even seasoning.
Serving

Serve the spaghetti carbonara immediately, garnished with additional Parmesan cheese and a sprinkle of black pepper if desired.
