Base Preparation

Prepare the Base
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.

Mix Egg Yolks and Sugar
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy.

Cook the Mixture
Cook over medium heat, stirring constantly until the mixture thickens enough to coat the back of a spoon (about 8-10 minutes).

Add Vanilla
Remove from heat and stir in the vanilla extract. Allow the base to cool to room temperature, then refrigerate until chilled (at least 2 hours).
Flavoring and Churning

Choose Your Flavor
Once the base is chilled, divide it into three equal parts for different flavors.

Prepare Chocolate Gelato
To one part of the base, add the unsweetened cocoa powder and whisk until fully incorporated. Pour into an ice cream maker and churn according to the manufacturer's instructions.

Prepare Strawberry Gelato
To the second part of the base, add the pureed strawberries and mix well. Pour into the ice cream maker and churn according to the manufacturer's instructions.

Prepare Pistachio Gelato
To the third part of the base, add the finely chopped pistachios and mix thoroughly. Pour into the ice cream maker and churn according to the manufacturer's instructions.
Serving

Freeze the Gelato
Transfer the churned gelato to airtight containers and freeze for at least 4 hours to firm up.
