For the Calamari

Method

For the Calamari

  1. 1

    Prepare the squid

In a bowl, mix the cleaned squid rings with salt, black pepper, and paprika. Let it marinate for about 15 minutes.

  2. 2

    Set up the breading station

In one bowl, place the all-purpose flour. In another bowl, add the cornstarch. In a third bowl, beat the eggs.

  3. 3

    Bread the squid

Dip each squid ring first in the flour, then in the egg, and finally in the cornstarch, ensuring an even coating.

  4. 4

    Heat the oil

In a large deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the squid

Carefully add the breaded squid rings to the hot oil in batches. Fry until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

For the Spicy Marinara Sauce

  1. 6

    Sauté the garlic

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and crushed red pepper flakes, sautéing for about 1 minute until fragrant.

  2. 7

    Add the tomatoes

Stir in the canned crushed tomatoes, oregano, salt, and sugar. Bring to a simmer.

  3. 8

    Simmer the sauce

Let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.

  4. 9

    Finish with basil

Remove from heat and stir in the chopped fresh basil before serving.
