Making the Cheesecake

Prepare the Crust

In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until well combined and the texture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan.

Preheat Oven

Preheat your oven to 325°F (163°C).

Prepare the Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add the granulated sugar, sour cream, vanilla extract, lemon juice, and mix until fully combined. Add eggs one at a time, mixing on low speed until just incorporated.

Bake the Cheesecake

Pour the cheesecake filling over the crust in the springform pan. Bake in the preheated oven for about 60 minutes or until the center is set but slightly jiggly.

Cool and Chill

Remove the cheesecake from the oven and allow it to cool at room temperature for about an hour. Then refrigerate for at least 4 hours or overnight for best results.

Serve

Once chilled, carefully remove the springform pan. Slice and serve as is or with your choice of toppings such as fruit, chocolate, or caramel.
