Prepare the Chicken

Preheat your oven to 375°F (190°C). Season the chicken thighs with salt and pepper. In a frying pan over medium heat, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pan.

Sear the Chicken

In the same frying pan, add the chicken thighs and sear for about 5 minutes on each side until golden brown. Remove from heat.

Add BBQ Sauce

Pour the BBQ sauce over the chicken thighs in a baking dish and crumble the cooked bacon on top.

Bake the Chicken

Cover the dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C).

Prepare the Pineapple Salsa

In a bowl, mix the diced pineapple, red onion, cilantro, and soy sauce. Stir well to combine.

Serve

Once the chicken is done, remove it from the oven and let it rest for a few minutes. Top with the pineapple salsa and sprinkle with mozzarella cheese. Serve and enjoy!
