Chicken and Gravy

Preparation and Assembly

    Fried Chicken

    2. Heat oil in a large skillet over medium-high heat. Fry the chicken until golden brown and cooked through, about 8-10 minutes per side. Remove and place on paper towels to drain.

    Gravy

    3. In a separate saucepan, melt butter over medium heat. Stir in flour and cook for about 2 minutes to make a roux. Gradually whisk in milk, stirring constantly until the gravy thickens. Season with salt and pepper to taste.

    Cheesy Grits

    4. Cook grits according to package instructions. Stir in cheese until melted and creamy. Keep warm.

    Sunny Side Up Eggs

    5. In a non-stick skillet, cook eggs sunny side up until whites are set but yolks remain runny.

    Fried Collard Greens

    6. In another skillet, heat a small amount of oil over medium heat. Add washed and dried collard greens, cooking until crispy but not burnt. Season with salt.

    Assembly

    7. To assemble, place a biscuit (store-bought or homemade) on a plate. Top with fried chicken, a slice of American cheese, a sunny side up egg, and pour gravy over the top. Serve with cheesy grits and fried collard greens on the side.
