Preparation

    Cook the Meats

    In a skillet over medium heat, add the chorizo and bacon. Cook until the chorizo is crumbled and the bacon is crispy, about 5-7 minutes. Remove from skillet and set aside.

    Sauté Vegetables

    In the same skillet, add olive oil. Sauté diced onion and bell pepper until soft, about 5 minutes.

    Scramble Eggs

    In a bowl, whisk eggs with salt and pepper. Pour into the skillet with the sautéed vegetables and scramble until cooked through.

    Combine Ingredients

    Add the cooked chorizo and bacon to the eggs, then crumble in the goat cheese. Mix until combined and heated through.

    Assemble Burritos

    Place a portion of the filling in the center of each tortilla. Fold the sides over the filling and roll tightly to enclose.

    Cook Grits

    In a pot, bring 4 cups of water to a boil. Add 1 cup of grits and a pinch of salt. Reduce heat and simmer, stirring occasionally, until thickened (about 5-7 minutes). Stir in cheddar cheese until melted.

    Serve

    Serve the burritos warm with pico de gallo on the side and cheesy grits.
