    Make the Dough

    In a large bowl, combine the flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a dough forms, then knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a bowl, mix together the lobster meat, ricotta cheese, Parmesan cheese, lemon zest, salt, and black pepper until well combined.

    Roll Out the Dough

    Divide the dough into four pieces. Roll out each piece into thin sheets (about 1/16 inch thick) using a pasta machine or rolling pin.

    Assemble the Ravioli

    Place teaspoons of the lobster filling on one sheet of dough, spacing them about 2 inches apart. Moisten the edges with water, then place another sheet of dough on top. Press firmly to seal and cut into individual ravioli.

    Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
