Add Citric Acid
Remove the pot from heat and stir in the citric acid dissolved in a little water. Let it sit for 5 minutes to allow the milk to curdle.

Add Rennet
Add the rennet dissolved in a small amount of water and stir gently for about 30 seconds. Let it sit undisturbed for 10-15 minutes until the curds form.

Cut the Curds
Using a long knife, cut the curds into 1-inch cubes. Let them sit for another 5-10 minutes to firm up.

Cook the Curds
Gently heat the curds to 105°F (40°C) over low heat, stirring gently for about 5 minutes.

Drain the Curds
Line a colander with cheesecloth and pour the curds and whey into the colander. Let it drain for 1-2 hours, or until it reaches your desired consistency.

Add Salt and Herbs
Once drained, transfer the curds to a bowl, add salt, and mix in any optional herbs. Adjust seasoning to taste.

Transfer the cheese into a mold or shape it by hand. Refrigerate for at least 2 hours before serving.
