    Make the Dough

    In a mixing bowl, combine the flour, sugar, and salt. Add the softened butter and mix until crumbly. Stir in the egg yolks and white wine (or vinegar) until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead it for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll Out and Cut Shells

    After resting, divide the dough into quarters. Roll out one quarter at a time until thin, about 1/16 inch. Cut into circles using a 4-inch round cutter.

    Shape and Fry

    Wrap each circle around a cannoli form and seal the edges with a little water. Heat the oil in a deep pan and fry the shells until golden brown. Remove and drain on paper towels.
