Prepare mussels
Rinse the mussels under cold water. Scrub shells to remove debris and remove the beard by pulling firmly toward the hinge. Discard any mussels that are open and do not close when tapped, or that have broken shells.
Sweat aromatics
In a large wide pot or deep sauté pan with a tight-fitting lid, heat 2 tbs olive oil and 1 tbs butter over medium heat until shimmering. Add the diced onion and a pinch of salt and sweat until translucent, about 4–5 minutes. Add the minced garlic and red pepper flakes and cook 30–45 seconds until fragrant, taking care not to brown the garlic.
Build the brodo
Stir in the crushed tomatoes and cook 2–3 minutes to bloom the tomato flavor. Add the white wine and bring to a gentle simmer; let the wine reduce for 2 minutes. Add the stock, thyme, lemon zest and half the chopped parsley. Season with 1 tsp salt and 1/2 tsp black pepper. Taste and adjust seasoning lightly — the mussels will add brininess.
Steam mussels
Increase heat to medium-high. Add the cleaned mussels to the pot, cover with the lid, and steam for 4–6 minutes, shaking the pan once or twice, until most mussels have opened. Do not overcook; once opened they are done. Use tongs to transfer opened mussels to a warmed bowl. Discard any mussels that remain tightly closed after cooking.
Finish brodo
Return the pot to low heat. Stir in 1 tablespoon butter for richness, squeeze in the juice of half a lemon, and adjust seasoning if needed. If you prefer a looser broth, add up to 1/4 cup more stock or water. Stir in remaining parsley.
Crispy Pancetta
While the mussels cook, heat a small skillet over medium. Add diced pancetta (add 1 tsp olive oil only if your pancetta is very lean). Cook, stirring occasionally, until fat renders and pieces are browned and crisp, 6–8 minutes. Transfer crisp pancetta to paper towels to drain. Reserve 1–2 teaspoons of the rendered fat to drizzle into the broth if desired.
Finishing & Serving
Assemble and serve: Divide the steamed mussels among shallow bowls. Ladle the hot tomato-white wine brodo over the mussels. Scatter the crispy pancetta on top and garnish with extra chopped parsley and an extra grind of black pepper. Serve immediately with thick slices of crusty bread and optional softened butter to soak up the broth.
Timing and storage notes: Total active cook time is short; serve immediately for best texture. Leftover broth can be refrigerated up to 2 days; remove mussels from shells if storing longer and keep separately.
