    Boil Water and Dissolve Sugars

    In a large pot, bring 4 cups of water to a boil. Once boiling, remove from heat and gradually stir in 2 cups of granulated sugar and 1 cup of brown sugar until completely dissolved.

    Add Flavorings

    After the sugars have dissolved, add 2 tsp of vanilla extract, 1 tsp of wintergreen extract, 1 tsp of sarsaparilla extract, and 1 tsp of birch bark extract. Stir well to combine.

    Add Spices

    Next, add 1 tsp of nutmeg, 1 tsp of allspice, 1 tsp of cinnamon, and 1 tsp of cloves to the mixture. Stir until the spices are fully incorporated.

    Cool the Mixture

    Allow the mixture to cool to room temperature. This step is important to avoid killing the yeast in the next step.

    Add Yeast

    Once the mixture has cooled, sprinkle 1 tsp of yeast over the surface and gently stir it in. Cover the pot with a clean cloth.

    Let the mixture sit at room temperature for 24 to 48 hours. During this time, the yeast will ferment the sugars, producing carbonation.
