Method
Preparing the Tea
Boil the Water
In a medium saucepan, bring 4 cups of water to a rolling boil.
Steep the Raspberry Leaves
Once the water is boiling, remove it from heat and add 2 cups of dried raspberry leaves. Cover the saucepan with a lid and let it steep for about 10 minutes.
Strain the Tea
After steeping, use a fine mesh strainer to strain the tea into a large teapot or pitcher, discarding the leaves.
Flavoring the Tea
Add Fresh Raspberries
In a separate bowl, gently mash 1 cup of fresh raspberries until they are juicy but still have some texture.
Mix in Honey and Lemon Juice
Add 2 tablespoons of honey and 1 tablespoon of lemon juice to the mashed raspberries. Stir well to combine all the flavors.
Combine with Tea
Pour the raspberry mixture into the strained tea and stir until well combined. Adjust sweetness to taste with additional honey if desired.
Serving
Serve Hot or Cold
You can serve the raspberry tea hot immediately or chill it in the refrigerator to serve cold over ice.
Garnish
For an extra touch, garnish each glass with a few whole fresh raspberries or a sprig of mint.
