Preparing the Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into evenly sized pieces. Place them in a large pot and cover with cold water. Add 1 tsp of salt and bring to a boil over high heat. Once boiling, reduce to medium heat and cook for 15-20 minutes or until tender.

    Prepare the Garlic

    While the potatoes are boiling, peel the garlic cloves and mince them finely.

    Mash the Potatoes

    Once the potatoes are tender, drain them and return them to the pot. Add the minced garlic, butter, milk, salt, and black pepper. Mash until smooth and creamy, adjusting the consistency with more milk if desired. Set aside.

Cooking the Ribeye Steak

    Prepare the Steak

    Take the ribeye steak out of the refrigerator and let it sit at room temperature for about 30 minutes. Pat it dry with paper towels and season generously with salt and black pepper on both sides.

    Cook the Steak

    Preheat a cast-iron skillet or grill over high heat. Once hot, add the steak. Cook for about 4-5 minutes on one side without moving it, then flip and cook for an additional 3-4 minutes for medium-rare. Adjust cooking time as needed for desired doneness.

    Rest the Steak

    Remove the steak from the skillet and transfer it to a cutting board. Let it rest for 5-10 minutes before slicing.

Cooking the Asparagus

    Prepare the Asparagus

    Trim the woody ends off the asparagus and rinse under cold water.

    Sauté the Asparagus

    In the same skillet used for the steak, add a little olive oil if needed and heat over medium-high. Add the asparagus and sauté for 5-7 minutes until tender and slightly charred. Season with salt and pepper to taste.

Plating

    Serve the Meal

    On a plate, serve a generous scoop of garlic mashed potatoes alongside the ribeye steak, sliced against the grain. Add the sautéed asparagus on the side for a complete meal.
