    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thick fries.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the cut fries to the hot oil in batches. Fry until golden brown and crispy, about 4-6 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt to taste.

Gravy

    Make the Roux

    In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for 2-3 minutes until golden brown.

    Add the Stock

    Slowly whisk in the beef stock, ensuring there are no lumps. Continue to cook, stirring constantly, until the gravy thickens, about 5-7 minutes.

    Season the Gravy

    Stir in the soy sauce and black pepper. Adjust seasoning if necessary, then remove from heat.

Assemble the Poutine

    On a serving plate, layer the hot fries. Top with cheese curds and generously pour hot gravy over the top.
