Burger Preparation

    Form the Patties

    In a bowl, mix the ground prime rib beef with salt and black pepper. Form the mixture into two equal-sized patties, about 3/4 inch thick.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Place the patties on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Add Cheese

    During the last minute of cooking, place a slice of Havarti cheese on each patty and cover the grill or skillet to melt the cheese.

    Toast the Buns

    While the patties are cooking, toast the burger buns cut-side down on the grill or in a toaster until golden brown.

Port Wine Reduction Preparation

    Sauté Shallots

    In a saucepan, melt 2 tablespoons of butter over medium heat. Add the chopped shallots and sauté until translucent, about 2-3 minutes.

    Add Wine and Simmer

    Pour in the port wine, bring to a boil, then reduce heat to low, allowing it to simmer until reduced by half, about 10-15 minutes.

    Finish the Sauce

    Stir in the balsamic vinegar, fresh thyme, salt, and black pepper. Allow the sauce to simmer for another 2-3 minutes until thickened.

Assembly

    Assemble the Burger

    Place each cooked patty with melted Havarti cheese onto the bottom half of the toasted burger bun. Spoon the port wine reduction generously over the cheese and top with the other half of the bun.

    Serve

    Serve the port wine burgers immediately with your choice of sides, such as fries or a salad.
