Method
Beef Preparation

Slice the Beef
Thinly slice the prime rib roast against the grain into strips approximately 1/4 inch thick.

Sauté the Vegetables
In a large skillet, heat a tablespoon of oil over medium heat. Add the sliced onions and green bell peppers. Sauté until they are softened, about 5-7 minutes.

Add Garlic
Finely chop the garlic cloves and add them to the skillet. Cook for an additional 1-2 minutes until fragrant.
Au Jus Preparation

Combine Ingredients
In a separate pot, combine the beef broth, Worcestershire sauce, dried oregano, salt, and black pepper. Bring to a simmer over medium heat.

Simmer
Let the mixture simmer for about 10-15 minutes to allow the flavors to meld.
Assembly

Combine Beef and Vegetables
Once the vegetables are cooked, add the sliced beef to the skillet and mix well to combine. Heat through for about 5 minutes.

Prepare Hoagie Buns
Slice the rustic hoagie buns open, but not all the way through, to create a pocket for the filling.

Fill the Buns
Spoon the beef and vegetable mixture into each hoagie bun generously.

Serve with Au Jus
Serve the filled hoagie buns with a small bowl of the prepared Au Jus and a side of sport peppers.
