Prepare the Chickpeas
If using dried chickpeas, soak 1 cup of chickpeas in water overnight. Drain and rinse them, then cook in boiling water for about 1 to 1.5 hours until tender. If using canned chickpeas, simply drain and rinse them.

Combine Ingredients
In a food processor, combine the cooked or canned chickpeas, tahini, lemon juice, garlic, olive oil, ground cumin, and salt.

Blend Until Smooth
Process the mixture until smooth. You may need to stop occasionally to scrape down the sides of the bowl with a spatula.

Adjust Consistency
If the hummus is too thick, add water one tablespoon at a time until you reach your desired consistency.

Serve
Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with paprika and chopped fresh parsley before serving.
