Herb Roasted Chicken

Preheat the Oven
Preheat your oven to 375°F (190°C).

Prepare the Chicken
Rinse the whole chicken inside and out under cold water. Pat it dry with paper towels.

Make the Herb Mixture
In a small bowl, mix together olive oil, chopped rosemary, thyme, parsley, minced garlic, lemon juice, salt, and black pepper.

Season the Chicken
Rub the herb mixture all over the chicken, making sure to get under the skin and inside the cavity.

Roast the Chicken
Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Rest the Chicken
Remove the chicken from the oven, cover with aluminum foil, and let it rest for 10-15 minutes before carving.

Prepare Garlic Butter
In a small saucepan, melt the butter over low heat. Add minced garlic and cook until fragrant, about 2 minutes.

In a large bowl, toss the sliced carrots and zucchini with olive oil, salt, and black pepper.

Roast the Vegetables
Spread the vegetables on a baking sheet and roast in the oven alongside the chicken for the last 25-30 minutes of cooking time.
