    Prepare the Chicken

    In a bowl, mix together olive oil, lemon juice, garlic powder, salt, and black pepper to create a marinade. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes.

    Prepare the Vegetables

    Wash and prepare the spinach, asparagus, carrots, zucchini, grape tomatoes, and English cucumber. Cut the asparagus into 2-inch pieces, slice the carrots into thin rounds, and slice the zucchini into half-moons. Halve the grape tomatoes and slice the cucumber into rounds.

    Grill the Chicken

    Preheat the grill over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from the grill and let rest for a few minutes.

    Sear the Vegetables

    In a skillet over medium heat, add a little olive oil and add the asparagus, carrots, and zucchini. Sear for about 5-7 minutes until tender. Add the halved grape tomatoes and cook for an additional 2-3 minutes until they are softened.

    Assemble the Burger

    On a plate, create a bed of fresh spinach. Slice the grilled chicken breasts and place them on top. Add the sautéed vegetables, then finish with the sliced English cucumber. Serve immediately.
