Preparing the Fish

    Make the Batter

    In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and has a thick consistency.

    Prepare the Fish

    Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it's well-coated.

    Heat the Oil

    In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil, frying them in batches for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Preparing the Fries

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/4 inch wide.

    Rinse and Soak

    Rinse the potato strips under cold water to remove excess starch, then soak them in cold water for at least 30 minutes.

    In a separate deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the soaked and rinsed potato strips to the hot oil in batches. Fry for about 5-7 minutes or until they are golden and crispy. Remove and drain on paper towels, sprinkling with salt to taste.

Serving

    Serve the crispy battered fish alongside the hot fries. Optionally, serve with tartar sauce and lemon wedges.
