Prepare the Veggie Burgers

Cook the Beyond Burgers
Heat a non-stick skillet over medium heat. Place the Beyond Burger patties in the skillet and cook for about 3-4 minutes on each side, or until they are heated through and have a nice sear. Remove from heat and let them rest.
Prepare the Fresh Bed of Spinach

Wash the Spinach
Rinse the fresh spinach leaves thoroughly under cold water. Drain and pat dry with a clean kitchen towel. Arrange the spinach leaves on a large serving platter.
Grill the Vegetables

Grill the Asparagus
Trim the woody ends off the asparagus. Toss them in a bowl with 1 tablespoon of olive oil, salt, and pepper. Grill on medium-high heat for about 5-7 minutes until tender and slightly charred.

Prepare the Carrots and Zucchini
Peel and slice the carrots into thin rounds. Slice the zucchini into half-moons. Toss both in a bowl with the remaining tablespoon of olive oil, salt, and pepper. Grill them for about 5-6 minutes until tender.

Sear the Grape Tomatoes
In the same skillet used for the burgers, add the grape tomatoes and sear them on medium heat for about 2-3 minutes until they are blistered. Add a tablespoon of lemon juice and toss gently.
