Preparation of Bacon Jam

    Cook the Bacon

    In a skillet over medium heat, cook the pecan-wood bacon until crispy. Remove from the skillet and drain on paper towels.

    Sauté the Onions

    In the same skillet, add the chopped onion and sauté until soft and translucent, about 5 minutes.

    Combine Ingredients

    Add the cooked bacon back to the skillet with the sautéed onions. Stir in brown sugar, apple cider vinegar, and black pepper. Cook for an additional 5 minutes until the mixture thickens slightly.

    Blend the Jam

    Transfer the bacon mixture to a food processor and pulse until you achieve a jam-like consistency. Set aside.

Burger Preparation

    Make the Burger Patties

    In a bowl, combine the ground prime rib beef, salt, black pepper, and garlic powder. Mix gently and form into two equal-sized patties.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes on each side, or until they reach your desired level of doneness.

    Add Cheese

    During the last minute of cooking, place a slice of Gouda cheese on each patty and cover to melt.

Assemble the Burger

    Toast the Buns

    Lightly toast the burger buns on the grill or in a toaster until golden brown.

    Layer the Ingredients

    On the bottom half of the bun, add a layer of lettuce, followed by the burger patty with melted Gouda cheese, a generous spoonful of bacon jam, and sliced tomato. Top with the other half of the bun.
