Prepare the Vegetables
Peel and finely chop the fresh garlic. Peel and chop the red onion into small pieces. Clean the mushrooms with a damp cloth and slice them. Drain the canned diced tomatoes and set aside. Rinse the fresh spinach under cold water and pat dry.

Sauté the Vegetables
In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the chopped red onions and sauté for 2-3 minutes until they become translucent. Add the minced garlic and sauté for another minute until fragrant.

Incorporate Tomatoes
Stir in the diced tomatoes, and cook for an additional 3-4 minutes until everything is well combined and heated through.

Add Spinach
Gradually add the fresh spinach to the skillet, stirring until it wilts and reduces in volume, which should take about 2-3 minutes. Season with salt and pepper to taste.

Once everything is cooked through, remove from heat and serve warm as a side dish or over cooked grains like quinoa or rice.
