Pork Chops Preparation

Season the Pork Chops
Rub the pork chops with salt and black pepper evenly on both sides.

Sear the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes per side until golden brown. Remove from skillet and set aside.

Deglaze with White Wine
Pour in the white wine and sprinkle in the dried oregano. Stir well, scraping the bottom of the skillet to release any browned bits. Bring the sauce to a simmer.

Add Pork Chops Back
Return the seared pork chops to the skillet, nestling them into the sauce. Reduce heat to low, cover, and let simmer for about 10-15 minutes.

Cook the Potatoes
Add the boiled potato wedges to the skillet and toss to coat in the butter mixture. Pour in the chicken broth and bring to a simmer. Cover and cook for about 10 minutes until the potatoes are tender and the broth has mostly evaporated.
Serving

Plate the Dish
Serve the pork chops topped with the wine sauce alongside the Vesuvio potatoes. Garnish with additional fresh rosemary if desired.
