Filling Preparation

    Prepare the Filling

    In a mixing bowl, combine ricotta cheese, chopped fresh spinach, grated Parmesan cheese, 1 egg, minced garlic, salt, and black pepper. Mix well until fully combined. Set aside.

Dough Preparation

    Make the Dough

    In a large bowl, mix all-purpose flour, 2 eggs, water, and 0.5 tsp of salt. Knead the dough for about 10 minutes until it becomes smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

Marinara Sauce Preparation

    Cook the Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the canned crushed tomatoes, oregano, basil, salt, and black pepper. Simmer for 20 minutes until the sauce thickens.

Ravioli Assembly

    Assemble the Ravioli

    Roll out the rested dough on a floured surface to about 1/8 inch thickness. Cut into squares (about 3x3 inches). Place a spoonful of filling in the center of half the squares. Moisten the edges with water and top with the remaining squares. Press to seal tightly.

Coating and Cooking

    Coat and Toast the Ravioli

    In a shallow bowl, beat 1 egg with milk. In another bowl, mix breadcrumbs and 0.5 cups of Parmesan cheese. Dip each ravioli in the egg mixture, then coat with breadcrumbs. Preheat oven to 400°F (200°C). Place the ravioli on a baking sheet and bake for 20-25 minutes until golden brown.
