Marinate the Chicken
In a bowl, whisk together the lemon juice, olive oil, minced garlic, salt, black pepper, and thyme. Place the chicken halves in a large resealable bag and pour the marinade over. Seal the bag, ensuring the chicken is well coated. Refrigerate for at least 1 hour, preferably overnight.

Prepare the Grill
Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.

Prepare the Potatoes
Preheat your oven to 400°F (200°C). In a large bowl, combine the quartered potatoes, lemon juice, olive oil, garlic powder, salt, and black pepper. Toss until the potatoes are well coated.

Roast the Potatoes
Spread the potatoes on a baking sheet in a single layer. Roast in the preheated oven for 30-35 minutes or until golden and tender. Stir halfway through cooking for even roasting.

Once cooked, remove from the oven and sprinkle with fresh parsley before serving.

In a large bowl, combine the mixed greens, halved cherry tomatoes, and sliced cucumber.

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and black pepper.
