Marinating Pork Chops

Prepare the Marinade
In a bowl, combine the olive oil, soy sauce, minced garlic, dried oregano, black pepper, and salt to taste. Mix well.

Marinate the Pork Chops
Place the pork chops in a large resealable bag or shallow dish, and pour the marinade over the chops. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.

Prepare the Vegetables
Slice the bell peppers and onion into thin strips.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced peppers, onion, minced garlic, and season with salt and black pepper to taste. Sauté for about 10-15 minutes until the vegetables are tender and slightly caramelized.

Cook the Rice or Quinoa
In a saucepan, bring 4 cups of water or broth to a boil. Add 2 cups of rice or quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice/quinoa is cooked and the liquid is absorbed.
