    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Walleye

    Rinse the walleye fillets under cold water and pat them dry with paper towels.

    Season

    Season both sides of the walleye fillets with salt and black pepper.

    Sear Walleye

    Heat olive oil in a large oven-proof skillet over medium-high heat. Add the seasoned walleye fillets and sear for 3-4 minutes on each side until golden brown.

Parmesan Crust Mixture

    Prepare Crust Mixture

    In a mixing bowl, combine grated Parmesan cheese, panko breadcrumbs, garlic powder, and dried parsley. Mix well.

    Add Parmesan Crust

    Once the walleye fillets are seared, remove the skillet from the heat. Brush the melted butter on top of the fillets and generously sprinkle the Parmesan crust mixture over each fillet.

    Bake Walleye

    Transfer the skillet to the preheated oven and bake for about 10-12 minutes, or until the crust is golden and the fish flakes easily with a fork.

Vegetables & Side

    Blanch Vegetables

    While the walleye is baking, prepare the green beans. In a small pot, bring water to a boil and blanch the green beans for 3-4 minutes until tender-crisp, then drain.

    Season Vegetables

    In the same pot, drizzle olive oil over the green beans, season with salt and pepper, and toss to coat.

    Serve

    Serve the walleye fillets with the sautéed green beans, a lemon wedge on the side, and your choice of side (rice or potatoes).
