Cook the Pasta
In a large pot, bring water to a boil. Add a pinch of salt and the penne pasta. Cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Prepare the Chicken
While the pasta is cooking, season the boneless chicken breasts with salt, black pepper, garlic powder, and Italian seasoning on both sides.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest for a few minutes before slicing.

Sauté the Vegetables
In the same skillet, add the mixed vegetables and sauté for 3-4 minutes until they are tender. Set aside.

Combine Ingredients
In a large mixing bowl, combine the cooked penne pasta, sautéed vegetables, and marinara sauce. Mix well until all ingredients are evenly coated with the sauce.

Add Chicken and Cheese
Slice the cooked chicken breasts and place them on top of the pasta mixture. Sprinkle the mozzarella cheese evenly over the top.

Bake the Dish
Preheat the oven to 375°F (190°C). Transfer the pasta mixture to a baking dish. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
