Method
Dough Preparation
- 1
Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into the well. Using a fork, gradually mix the flour into the eggs until a dough begins to form.
- 2
Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until it is smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.
Filling Preparation
- 3
Prepare the Filling
In a bowl, mix together the ground beef, ricotta cheese, Parmesan cheese, minced garlic, salt, black pepper, and parsley until well combined. Set aside.
Meat Sauce Preparation
- 4
Cook the Meat Sauce
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- 5
Brown the Beef
Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 7-10 minutes.
- 6
Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, salt, and black pepper. Simmer the sauce for about 20 minutes, stirring occasionally. Add chopped fresh basil just before serving.
Ravioli Assembly
- 7
Roll out the Dough
After the dough has rested, roll it out on a floured surface to about 1/16-inch thickness. Cut into squares or circles, depending on your preference.
- 8
Fill the Ravioli
Place about 1 tablespoon of the filling in the center of each square or circle. Moisten the edges with water, fold over to create a half-moon shape, and press to seal.
- 9
Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully drop the ravioli in batches and cook for about 3-4 minutes until they float to the top. Remove with a slotted spoon.
Serving
- 10
Serve with Sauce
Plate the cooked ravioli and top with the meat sauce. Garnish with additional Parmesan cheese and fresh basil if desired.
