Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring salted water to a boil.

  2. 2

    Cook Linguine

Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining, reserve about 1 cup of pasta water, then drain the linguine.

Preparing Sauce

  1. 4

    Whisk Eggs and Cheese

In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper until smooth.

Cooking Pork

  1. 5

    Cook Guanciale

In a large skillet over medium heat, add the guanciale and cook until crispy and golden, about 5-7 minutes.

Combining Ingredients

  1. 6

    Combine Pasta and Guanciale

Add the drained linguine to the skillet with the guanciale and toss to combine.

  2. 7

    Add Egg Mixture

Remove the skillet from heat and quickly pour in the egg and cheese mixture, tossing continuously to coat the pasta without scrambling the eggs.

  3. 8

    Adjust Consistency

If the sauce is too thick, add reserved pasta water a little at a time until the desired creamy consistency is reached.

Serving

  1. 9

    Plate the Pasta

Serve immediately, garnishing with freshly chopped parsley and additional Pecorino Romano cheese if desired.
